Restaurant NIKKEI NINE

With surprising combinations and intensive flavours, the Nikkei Cuisine is cultivating a style which complements the Japanese subtlety for traditional and elegant meals with savoury elements from Peru, whether it’s tartar from Wagyu steak from the southernmost tip of Japan, or with pickled scallops, which are given a whole new taste thanks to Peruvian elements. Food is grilled over an open fire on the Japanese Robata grill in a walk-in show kitchen.

Be enchanted by the cosmopolitan atmosphere of the design restaurant, and enjoy the finest cuisine at Hamburg’s hottest venue right by the Inner Alster. A DJ provides a contemporary soundtrack from Thursdays to Saturdays.

The Team

Restaurant manager Matthias Förster

Beginning at the Restaurant Haerlin** at Hotel Vier Jahreszeiten, the Rostock native has worked at The Howard in London among other places. Most recently he worked as restaurant manager at the Brasserie Desbrosses at the Ritz-Carlton Berlin and in the same position at Tim Mälzer’s Bullerei.

 

Chef Kai Weigand

Stuttgart-born Kai Weigand has been part of our NIKKEI NINE crew since April 2022. Before moving to the north, he worked as head chef at Gutshaus Stolpe. As Head Chef at NIKKEI NINE, he combines his finest culinary skills with his own personal touch.

Japan meets Peru by the Inner Alster Lake

In the modern era when the world is getting smaller, typical national cuisines are merging together, and traditional dishes and cooking techniques in particular are being infused with unusual ingredients from faraway parts of the world. This interaction between contrasts is especially exciting when cuisines from different continents are fused together. Nikkei Cuisine describes the Japanese cuisine with Peruvian influences, which comes from the culinary skills of Japanese emigrants to South America.

Enjoy the fusion of east and west by means of extraordinary dishes, such as the so-called “Black Cod”, a signature dish of the NIKKEI NINE, or the magically fresh “Nikkei-Ceviche”. The finest Japanese sushi or Wagyu beef on a hot stone - cosmopolitan living meets the finest of cuisine.
